1. Bring a large pot of salted water to the boil – add the pasta and cook for about 8 minutes, or until al dente
  2. In the meantime, in a food processor, blitz basil, oil, cheese, garlic and ¼ cup pine nuts until smooth. Season lightly with salt and pepper
  3. Once the pasta is cooked, toss through the pesto and serve topped with shaved parmesan, toasted pine nuts and a crack of fresh pepper
