Method

  1. Drizzle olive oil in a deep pan and heat over a medium heat.
  2. Add onion, thyme, salt and pepper and cook for 2–3 minutes until the onion is translucent.
  3. Add garlic and lemon rind to the pot and cook for 1–2 minutes. Add vegetable stock, and the risoni and reduce the heat to low. Cook for 8 minutes or until the risoni is almost cooked, stirring occasionally. Season with salt and pepper.
  4. When the risoni is almost cooked, add prawns and cook until the prawns and risoni are completely cooked through.
  5. Turn off the heat, add the spinach and allow it to wilt in the heat of the dish. Add the lemon juice and a dash of olive oil.
  6. Serve with crumbled feta over the top and enjoy with family and friends!
