In a small saucepan add in around 2 inches of water and bring it to a boil. Add in your risoni pasta and cook for around 5 minutes until al dente.

In a separate pan, heat it and add in the olive oil.

Add in the lentils, diced tomato, tomato pasta, carrot and water and stir to combine. Bring the mixture to a boil then reduce to a simmer.

Cook for around 2-3 minutes.

Drain the pasta and add it to the lentils. Stir to combine and serve.
