Method

  1. In a large, deep pan heat a good drizzle of olive oil over medium heat.
  2. Add onion, chilli, lemon rind, garlic, half the parsley and a pinch of salt and pepper. Cook for 2-3 minutes, or until softened.
  3. Add zucchini and cherry tomatoes and cook for 5-6 minutes or until softened.
  4. Meanwhile, cook the linguine for 7 minutes in a pot of boiling salted water.
  5. Add crab into the pan with a ladle of the pasta water. Cook for 3-4 minutes.
  6. Finally, add pasta into the pan with another ladle of the pasta water, and top with parmesan, the remaining half of parsley and season again with salt and pepper.
  7. Serve with extra parmesan cheese and chilli oil.
  8. Enjoy with family and friends.
