Method

  1. Cook your pasta in boiling water and steam your corn and peas on top.
  2. When the pasta is cooked, drain and rinse to cool.
  3. In a separate bowl mix the beef mince, pasta and chia seeds together. Add any herbs and spices you may like. Roll them into around 16 ping pong sized balls.
  4. Heat a pan with oil. Place the four balls in and brown them on one side, flip to the other side using a spoon and brown again.
  5. Once browned, add in the canned diced tomatoes.
  6. Bring the mixture to a simmer and then cook for around 10 minutes. Flip the meatballs over every couple of minutes to cook through. Serve together with your corn, carrots and peas. The carrots can be raw or steamed depending on your child’s preference.
