Method

  1. Cook pasta as per packet instructions. Rinse with cold water and leave to cool.
  2. In a small frying pan, heat olive oil over medium heat. Add haloumi and cook for 2-3 minutes on each side, or until lightly golden brown.
  3. In a large mixing bowl, add cooked pasta, capsicum, sun-dried tomatoes, olives, artichokes, red onion and basil. Top with olive oil and balsamic vinegar and mix gently until combined.
  4. Transfer to a serving plate and top with haloumi.
  5. Serve and enjoy with family and friends.
