Minestrone with San Remo Tomato and Basil Sauce

Ingredients
San Remo No. 35 Elbows 500g
San Remo Tomato and Basil Sauce 500g
2 tbsp olive oil
140g Pancetta, finely diced
1 celery stick, chopped
1 zucchini, chopped
500ml salt reduced vegetable stock
500ml water
1/4 tsp smoked paprika
400g tin cannellini beans, drained
1 potato, diced
70g baby spinach
Salt flakes and freshly ground black pepper
Parmesan cheese, to serve
Method
Heat olive oil in a large saucepan over medium to high heat and add pancetta and stir occasionally.
Add celery and zucchini and stir to coat in the oil.
Add San Remo Pasta Sauce, stock, water, smoked paprika, cannellini beans, potatoes and bring to the boil.
Turn down to a simmer and cook for 25 minutes.
Add spinach and pasta to the pot and cook for 8 minutes. Season with salt and pepper.
Finish with freshly grated parmesan.
Serve and enjoy with family and friends!
