1. Preheat oven to 200°C.
  2. Bring a large pot of salted water to a boil, and cook curls for half of the time specified on the packet directions.
  3. Heat a pan with olive oil; then add the onions, garlic, chilli flakes and bay leaf and begin to slowly caramelize.
  4. After a few minutes, or when the onions have gained colour, add in the mince and begin to brown off.
  5. Add the red wine, tomato passata, basil and season with salt and pepper.
  6. Turn the heat to a low to medium flame and allow to cook for about 20-30 minutes or until the sauce has thickened
  7. Add the cooked pasta to the sauce and toss to combine.
  8. Place the pasta into little ceramic ramekin pots with torn bocconcini and bake for 10 minutes.
  9. Sprinkle with some grated parmesan cheese. Serve and enjoy!
