Potato Soup with Croutons

Ingredients
San Remo No47 Risoni 500g
1 stock cube
1 medium onion
500g potatoes, peeled and cubed
salt and pepper, a good pinch of both
50g bacon fat
2 tbsp tomato puree
1.5L water
4-5 tbsp croutons (toasted or fried diced bread)
½ glass olive oil
Method
Finely chop onion and bacon fat. Gently fry with oil until fat is melted and onion is soft.
Add water, stock cube, tomato puree, potatoes and salt and pepper.
Cover and cook over a medium heat for about one hour.
Add pasta. When the pasta is cooked serve soup with croutons.
