1. Combine tahini, yoghurt, lemon juice, mint and salt & pepper in a small jar and shake to emulsify into a dressing.
  2. Heat pasta according to packet instructions.
  3. Place pasta into a bowl, add chickpeas and stir through the dressing.
  4. Divide pasta among 2 bowls and top with the roasted cauliflower and cucumber.
  5. Scatter with spiced roasted chickpeas and mint.
