Red Pesto

Method

  1. To make the red pesto, add all pesto ingredients except the olive oil to a blender. Blend while slowly pouring in the olive oil until smooth. Set aside.
  2. Cook San Remo Penne according to packet instructions. Drain and set aside.
  3. Heat olive oil in a frying pan over medium–high heat. Add chicken, season with salt and pepper, and cook for 6–8 minutes until cooked through. Remove from pan.
  4. Add a little more olive oil to the pan. Cook onion and garlic for 2 minutes until softened.
  5. Add broccoli and cook for 5 minutes until tender.
  6. Return chicken to the pan, add cooked pasta and red pesto, and toss gently to combine. Season to taste.
  7. Serve warm with grated parmesan and enjoy with family and friends
