Boil some water and cook your pasta and steam your sweet potato on top. Alternatively you could use leftover cold pasta from the night before.

Drain and cool the pasta once cooked.

In a bowl, mix and mash the salmon, pasta, sweet potato (or potato), flour, egg altogether (you could also put in some grated carrot, zucchini or some cooked peas).

On a plate, pour out the bread crumbs.

Form 8 patties with the salmon mixture and place them onto the breadcrumb plate to cover with crumbs (note they are quite flexible).

In a pan heat the oil and place the salmon patties into the pan. Cook for around 2-3 minutes on each side (the ingredients are cooked, we are essentially reheating them).

Serve the patties with some cut up raw veggies and a dipping sauce. This suggestion is a mixture of yoghurt and mustard for a tangy creamy dip.
