Method

  1. In heavy pan, gently brown garlic and bay leaves in oil. Remove from heat, add chopped tomatoes and juice, sugar, salt, pepper and stir. Fry on high heat for 15-20 minutes or until thick. Remove garlic and bay leaves.
  2. Cook pasta according to packet directions and drain.
  3. Toss hot, drained pasta with mozzarella cheese and half of the tomato sauce. Pour rest of sauce on top of each serve.
