1. Heat a little olive oil in a heavy based pan over a medium heat and brown off the mince. Once browned drain off any excess fat and set aside.
  2. Sauté the onion and garlic until softened. Add in the remaining vegetables including basil and cook until softened.
  3. Once vegetables are soft add mince back into the pan. Stir in the tomato paste, passata oregano and bay leaves. Add in the butter (this gives a lovely rich and velvety texture to the sauce. It also cuts through any bitterness which is perfect for children’s taste buds.). Season with a little salt and pepper. Give a good stir and lower heat. Simmer on a low heat for about 45 minutes.
  4. Meanwhile, in a pot of boiling, salted water, cook Pulse Pasta as per packet directions until al dente.
  5. Stir sauce through the pasta and top with a little grated Mozzarella for kids or adults enjoy with some sharp Parmesan.
