1. Heat a large frying pan over medium heat and add the olive oil, garlic and cherry tomatoes. Cook for 5 minutes, then add passata and semi-dried tomatoes and mix to combine. Season well with salt and pepper.
  2. Meanwhile, in a pot of boiling salted water, cook pasta as per packet directions
  3. Cook pasta until al dente, then transfer it directly to the pan with the tomatoes along with a little pasta water and toss to combine and cook for a further 2 minutes.
  4. Add oregano and toss until wilted.
  5. To finish garnish with freshly grated parmesan.
  6. Serve and enjoy with family and friends!
