In a pot of boiling salted water, add pasta and cook as per packet instructions.

Whilst the pasta is cooking, heat up the oil in a large heavy based pan. Add shallots, chillies and tomato paste with a pinch of salt and mix well.

Cook over medium heat for 1-2 minutes or until the shallots have softened, before adding the vodka.
Note: Due to the alcohol content the pan may flame up. This is to be expected so move the pan around for 10-20 seconds until the alcohol evaporates and the flames die down.

Add half a ladle of pasta cooking water into the pan and mix well. Cook over medium heat for 3-4 minutes.

Add pasta into the pan with the vodka sauce and mix well, adding in extra pasta water as needed.

Turn off the heat and dollop in mascarpone, mixing well.
