For the Fresh Mint & Peas Pesto

Method

  1. Into a large salted pot of water, add the wagon wheels and cook to the packets instructions. Once cooked, strain off the pasta and cool either in the fridge or under cold running water.
  2. In a shallow frying pan, fry the bacon til nice and crispy; allow to cool.
  3. Make the Peas & Mint pesto by combining all ingredients in a food processor until smooth and consistent.
  4. In a large bowl, toss the pasta with the pesto, remaining peas and half of the crispy bacon - then season with salt and pepper.
  5. Place the pasta on a large platter, then sprinkle with the remaining crispy bacon & crumbled goats cheese.
  6. Finish with a drizzle of olive oil
