1. For pesto, place garlic, almond and a pinch of salt into the bowl of a small food processor. Blitz to form a coarse paste.
  2. Add mint and rocket and pulse until a paste forms.
  3. Drizzle in the olive oil with the motor running and process until softened.
  4. Add parmesan and continue to pulse.
  5. In a pot of boiling salted water, add pasta and cook as per packet instructions, retaining a little of the pasta cooking water.
  6. Add broccolini five minutes before end of cooking time for the pasta.
  7. Return cooked pasta and broccolini to the pot, add chicken and pesto, stir to combine and season to taste with salt and pepper. Add a little pasta cooking water to loosen the sauce if necessary.
  8. To finish garnish with mint leaves.
  9. Serve and enjoy with family and friends!
