Method

  1. Preheat oven to 180°C.
  2. In a bowl, coat the chicken with garlic, oregano, paprika, salt and pepper.
  3. Heat a small amount of olive oil in a non-stick frying pan over medium–high heat. Brown the chicken for 2 minutes per side.
  4. Transfer chicken to a lined baking tray and bake for 15 minutes, or until cooked through. Rest for 5 minutes, then slice into strips.
  5. Place couscous and butter into a large bowl. Pour over boiling water, cover and stand for 3–5 minutes. Fluff with a fork until light and separated.
  6. Add cucumber, red onion, capsicum, olives and cherry tomatoes. Drizzle with olive oil, add a pinch of salt and a squeeze of lemon.
  7. Top with sliced chicken and serve with tzatziki on the side or stirred through.
  8. Serve and enjoy with family and friends.
