Prawn, Pistachio and Pomegranate Christmas Salad

Method

1. Into a pot of boiling salted water, add the pasta and cook as per packet directions.
2. In the last 2 minutes of cooking pasta, add the kale to the water.
3. Once the pasta and kale are cooked, strain and run the pasta under cold water.
4. Drain well and place into a serving bowl along with the kale.
5. Add prawns, avocado, pistachio, pomegranate, coriander, mint and oranges and mix together.
6. In a small bowl, mix together all the dressing ingredients.
7. Pour dressing over the salad and top with pomegranate molasses.
