6 Minute Sugo With Spinach & Ricotta Ravioli

Ingredients
San Remo Fresh Spinach and Ricotta Agnolotti 625g
5 tbsp olive oil
2 garlic cloves
400g tin of San Marzano tomatoes or whole tomatoes
¼ cup basil leaves
Salt & pepper
½ cup grated parmesan
Method
Cook pasta as per packet directions.
In a pan on medium heat, add oil and garlic. Cook for 2 minutes until garlic is just colouring.
Next add tomatoes to the pan and crush with a wooden spoon.
Cook for 3 to 4 minutes, stirring constantly.
Add basil, stir through and turn off heat. Season sauce with salt & pepper.
Strain pasta and add to sauce. Add half the parmesan to sauce & stir.
Serve and sprinkle remaining parmesan over the top
