Method

  1. Boil some water and cook your pasta.
  2. While you are cooking the pasta, dry pan fry your pine nuts. Watch that the pine nuts do not burn, it only takes a moment.
  3. Pop the pine nuts into the blender with the oil, lemon juice, and beetroots
  4. You could also add a little parmesan cheese into the pesto or on top.
  5. Serve the pesto on top or stir it through the cooked and drained pasta.
