1. Cook the pasta according to the packet directions.
  2. Heat the olive oil in a frying pan over medium heat, then add the garlic and gently sauté for 2 minutes.
  3. In a bowl combine the tomatoes, capers, green olives and oregano Add the garlic and olive oil, mix well and season to taste. Add to the drained warm pasta, toss and set aside.
  4. Trim the garfish fillets, removing any fins or bones and lightly dust with rice flour.
  5. Using the same frypan, heat the vegetable oil and cook the garfish fillets, skin side down for 2 minutes over med-high heat, turn and cook for a further 1 minute. Remove and drain on kitchen paper.
  6. To serve, divide the pasta mix between 2 bowls, top each with 3 fillets of garfish and sprinkle with salt and pepper to taste.
