Into a pot of boiling salted water, add pasta and cook as per packet directions, reserve 1 cup of starchy water before draining.

Heat a large frying pan over high heat with ½ olive oil. Add the prawns and cook for 1-2 mins on each side or until just cooked. Remove and set aside.

Turn the heat to medium and add the remaining olive oil to the pan with the garlic, chilli and herbs. Cook for 1-2 minutes stirring constantly.

Add the tomato paste and cook for a further 3 minutes or until it has developed a deeper colour. Add in half the pasta water and grated pecorino and stir to combine. Remove from the heat.

Add the cream and pasta. Toss to coat the pasta in the sauce adding more pasta water as required.

Add the prawns and chopped parsley and stir. Serve with extra chilli flakes and grated pecorino.
