Ingredients
1 cup San Remo CousCous
1 BBQ’d chicken breast, shredded
1 bunch broccolini, blanched and chopped
60g baby spinach
2 tbsp olive oil
Salt and pepper, to taste
1/2 avocado, sliced
Method
Cook San Remo CousCous according to packet directions in a large bowl.
Add chicken, broccolini and spinach.
Add olive oil and season with salt and pepper.
Toss together and serve topped with sliced avocado.
