Method

  1. Put vegetables of your choosing in oven to roast. (Depending on your vegetable choice this can take up to 40 minutes)
  2. Cook San Remo CousCous as per packet directions.
  3. Meanwhile blend pesto ingredients together and add to a large bowl.
  4. Add cooked couscous, roast vegetables, avocado and cucumber.
  5. Season to taste.
