Method

  1. In a deep pot, heat olive oil over a medium heat. Add onion, garlic, chilli, carrot, celery, zucchini and mushrooms to the pot and cook for 5-7 minutes or until veggies begin to soften.
  2. Add dried lentils, tinned tomatoes and vegetable stock and season with salt, pepper and dried oregano.
  3. Leave to simmer for 15 minutes or until lentils are completely cooked. Add pasta and cook for 5 minutes or until al dente. If it's looking like it needs more liquid, add 1/2 a cup at a time until the lentils are fully cooked.
  4. In the final few minutes, add basil and parmesan cheese.
  5. Serve and enjoy with family and friends!
