Heat a medium, heavy based saucepan over medium heat, add olive oil and onion and sauté until softened.

Add sausage and break up into small pieces with a wooden spoon, sautéing until browned.

Add red wine and simmer for two minutes.

Add tomato paste and cook for two minutes.

Add passata and stock, season with salt and pepper and simmer for 30 minutes.

In a pot of boiling salted water, add pasta and cook as per packet instructions.

Add cooked pasta to the ragu and stir through.

Serve pasta garnished with parsley and enjoy with family and friends!
