Method

  1. To make the pesto, simply blend avocado, basil, nutritional yeast, rocket, pine nuts and soy milk in a blender or food processor until mixture is smooth.
  2. Into a pot of boiling salted water, add the pasta and cook as per packet directions.
  3. Mix the pesto together with the pasta.
  4. Serve with the cherry tomatoes and extra basil.
