Method

  1. Preheat oven to 190°C . Coat capsicum in 1 tbsp olive oil and place into the oven on a baking tray. Roast until blackened.
  2. Place capsicums in a bowl and cover with clingfilm. and allow to steam. When cool enough to handle, peel off the capsicum skins and remove seeds. Slice into strips.
  3. Heat a medium frypan over medium to high heat, add 1 tbsp olive oil and red onion and sauté until softened.
  4. Add garlic and chilli and sauté for a further minute.
  5. Add capsicum and olives and warm through.
  6. Meanwhile, in a pot of boiling salted water, add pasta and cook as per packet instructions.
  7. Add pasta to frypan, season with salt and pepper, add vinegar and toss to mix through.
  8. To finish garnish with oregano and parmesan.
  9. Serve and enjoy with family and friends!
