1. Into a pot of boiling salted water, add the pasta and cook as per packet directions.
  2. Heat olive oil and half the butter in a large pan on medium heat.
  3. Add garlic, thyme, oregano, pumpkin and broccolini to pan. Cook for 3 to 5 mins or until pumpkin has collapsed and broccolini is tender. Season with salt and pepper.
  4. Strain pasta and reserve 1 cup of pasta water. Add pasta and pasta water to pan.
  5. Add pasta to the pan, the remaining butter and half of the pecorino and cook for another minute.
  6. Turn off heat and serve with remaining cheese and pumpkin seeds.
