Quick and Easy Mango Couscous Salad

Ingredients
1/2 Cup San Remo wholemeal couscous
2/3 Cup Boiling water
60g Baby Spinach
1 Cucumber, sliced
1 Red Capsicum, cut into chunks
2 Mangos, cubed
2 tbsp Chopped Basil Leaves
1 Lemon
Salt and Pepper to taste
Method
In a large bowl, add couscous and boiling water and cover for 6 minutes.
Chop all remaining ingredients.
Once couscous has absorbed all of the water, stir through, baby spinach, cucumber, capsicum, mango and basil.
Serve as a side salad with a lemon wedge.
