Preheat the oven to 180°C.

Cook the pasta according to the packet directions, drain and reserve ¼ cup pasta water.

Place the prepared vegetables in a bowl and toss the olive oil through. Turn the oiled vegetables onto a baking tray and bake in preheated oven for 10-15 minutes or till lightly coloured.

Mix the roasted vegetables, pasta, baby kale and pasta water together, season if required

Serve in bowls with fresh basil leaves scattered over and a dollop of pesto.
