1. Preheat the oven to 180°C.
  2. Cook the pasta according to the packet directions, drain and reserve ¼ cup pasta water.
  3. Place the prepared vegetables in a bowl and toss the olive oil through. Turn the oiled vegetables onto a baking tray and bake in preheated oven for 10-15 minutes or till lightly coloured.
  4. Mix the roasted vegetables, pasta, baby kale and pasta water together, season if required
  5. Serve in bowls with fresh basil leaves scattered over and a dollop of pesto.
