Method

  1. In a pot of boiling salted water, add the pasta and cook as per packet directions.
  2. Heat a small frying pan and drizzle with olive oil. Add bacon and cook until lightly browned. Set aside and add artichoke hearts to frying pan, cook until browned on each side. Set aside.
  3. Meanwhile, heat a separate saucepan and drizzle with olive oil. Add onion and garlic to pan and cook for a minute until fragrant.
  4. Add the white wine and chilli flakes, cook on a higher heat for two minutes.
  5. Reduce the heat again and add tinned tomatoes, olives, sundried tomatoes and browned artichoke hearts. Allow to simmer until liquid has reduced.
  6. Once pasta is cooked, add to the saucepan along with the cooked bacon. Stir to combine.
  7. Serve with fresh basil leaves and enjoy with family and friends!
