Method

  1. Heat oil in a pan over a medium heat.
  2. Add in the vegetables and fry off for approximately 5 minutes or until the vegetables start to soften.
  3. Add the stock and tomato passata and simmer for 5 minutes.
  4. Once the vegetables are tender, add in the pasta.
  5. Return to the boil and allow pasta to cook as per the cooking time listed on pack.
  6. Stir in the basil and season with salt, pepper, and chilli.
  7. Serve in bowls topped with a sprinkle of Parmesan and your favourite bread and enjoy with family and friends!
