					To make the dressing. Place all ingredients into a bowl and mix until a smooth consistency is reached. Set aside.

					Place couscous into a large bowl and bring stock to the boil. 
				
			 
					- 
				
					Pour stock over couscous and cover with cling wrap. Set aside for 10 mins.
				
			 
					- 
				
					Remove cling wrap fluff couscous with a fork to separate the grains. 
				
			 
					- 
				
					Add all ingredients, except the chia seeds, into the bowl with the couscous, season with salt and pepper and mix well. 
				
			 
					- 
				
					Pour dressing over the top and garnish with chia seeds.
				
			 
					- 
				
					Serve and enjoy with family and friends.
