					Into a pot of boiling salted water, add the pasta and cook as per packet directions.

					Meanwhile, heat extra virgin olive oil in a heavy based pot,  add onion, ginger and garlic and cook until translucent.

					Add the turmeric and cook until fragrant. 
				 
- 
				
					Add the carrots and celery and cook for 3-4 minutes.

					Add the water and simmer until the carrot and celery are tender. 
				 
- 
				
					Add the lime juice, sriracha and tofu and simmer for an additional 5-10 minutes
				 
- 
				
					Remove from the heat and add the miso paste, stir to combine. 
				 
- 
				
					Add the spiralised zucchini and cooked pasta and season with salt and pepper, 
				 
- 
				
					Serve and enjoy!
