Method

  1. Pre heat the oven to 180°C.
  2. In a bowl, add tomatoes, garlic, chilli and olive oil. Toss together.
  3. Season with salt & pepper.
  4. Place tomato mixture on a tray and bake for 10 minutes or until soft.
  5. Cook pasta following pack instructions.
  6. In a food processor, add tomatoes, pine nuts, 1 cup of basil leaves and enough oil to blend together.
  7. Add extra salt and pepper to taste.
  8. Heat tomato sauce in a pan on medium heat and once pasta is cooked, strain and add to pan.
  9. Toss pasta through sauce and serve with remaining torn basil leaves over the top.
